This special coffee was originally created for Fellow Drops in 2024 and we are excited to bring it back this year. Mr. Patre took great care in the processing of all elements of this coffee, including a 72-hour anaerobic fermentation where the coffee is combined with a specific yeast strain and lactic acid bacteria. This symbiotic combination gives this coffee its intensely floral aroma and flavor.
What makes this coffee stand out
In March 2024 and for 3 months after, our team sampled 15 lots from Ratnagiri Estate after meeting Ashok Patre and experiencing the meticulous care behind his coffee firsthand. Witnessing the innovative processes shine through in the cup, from carbonic maceration to anaerobic fermentation, confirmed their belief in the exceptional potential of this coffee. This specific lot was blended together for Fellow as part of a Drop last year, and makes a comeback this month!
