About the Producers
Chiroso is a floral and sweet coffee variety that was developed in Colombia in the 2000's. Our sourcing partner, Unblended Coffee, worked with several women growers to bring us this special coffee. It is an incredibly sweet coffee with delicate floral and fruit notes. But there’s more to it than just flavor—this coffee helps women producers grow their farms and develop their skills in specialty coffee. It’s a step toward crafting more refined and consistent small-batch coffees while celebrating the work of these talented women.
What makes this coffee stand out
These women farmers hand-pick only the ripest coffee cherries and use water flotation to sort out high-quality fruit. The cherries then ferment in open baskets for 12–48 hours in their own pulp to begin breaking down mucilage. After depulping, the beans undergo a second fermentation in stainless steel tanks for 72–80 hours, followed by washing. Finally, the coffee is dried on open patios or in marquesinas for 8–10 days. It is important to intentionally work with and uplift women coffee farmers as they typically have access to less resources than male coffee producers do, such as access to land, capitol, and education to run their businesses.
It’s difficult to find good beans for the moka pot and we certainly enjoyed these. They are perfectly roasted for that method. Besides that, both hot and iced filter methods allowed to taste the flavors and notes. It is very nice.
